    Begin by chopping the onion, bell pepper, and celery into small pieces. Mince the garlic and slice the okra. Cut the chicken thighs and Andouille sausage into bite-sized pieces.

    In a large pot, heat the vegetable oil and butter over medium heat. Once melted, add equal parts of flour (not listed in ingredients but needed for roux) and cook, stirring constantly for about 15-20 minutes until the roux turns a dark brown color.
