    Begin by chopping the chicken thighs into bite-sized pieces and slicing the smoked sausage. Dice the onion, bell pepper, and celery. Mince the garlic and set all the vegetables aside.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes. Add the sliced sausage and cook for an additional 3-4 minutes until the sausage is slightly browned.
