Preparing the Brisket

Season the Brisket
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, thyme, and rosemary. Rub this seasoning mix all over the brisket, ensuring it's evenly coated.

Marinate (Optional)
For enhanced flavor, wrap the seasoned brisket in plastic wrap and refrigerate for at least 2 hours, or overnight if possible.
Cooking the Brisket

Preheat the Oven
Preheat your oven to 300°F (150°C).

Sear the Brisket
In a large oven-safe pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the brisket on both sides until browned, about 4-5 minutes per side.

Cook the Brisket
Cover the brisket with a lid or aluminum foil and transfer it to the preheated oven. Cook for approximately 3-4 hours, or until the internal temperature reaches 195°F (90°C) for tender slices.
Making the Au Jus

Reduce the Au Jus
Let the mixture simmer for about 20-30 minutes, allowing the flavors to meld. Strain the au jus to remove solids before serving.
Serving the Brisket

Rest the Brisket
Once the brisket is done, remove it from the oven and let it rest for 20-30 minutes before slicing to preserve juices.

Slice the brisket against the grain into thin slices. Serve with the prepared au jus on the side for dipping.
