Slice the Boudin
Remove the casing from the boudin sausage and slice it into thin rounds, approximately 0.5 cm thick.

Prepare the Bread
Lay out the slices of sourdough bread on a clean surface. Place a slice of sharp cheddar cheese on two of the bread slices.

Add the Boudin
Evenly distribute the sliced boudin on top of the cheddar cheese on the bread slices.

Place another slice of sharp cheddar cheese on top of the boudin, and then cover with the remaining slices of sourdough bread to form two sandwiches.

Spread one tablespoon of unsalted butter on the outer side of each sandwich.

In a skillet or frying pan, heat over medium heat. Once hot, place the sandwiches butter-side down in the pan.
