Preparing the Blackened Chicken

Mix the Seasonings
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper.

Pat the chicken breasts dry with paper towels. Rub the seasoning mixture generously over both sides of the chicken breasts.

Cook the Chicken
Heat the olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until the chicken is cooked through and has a dark, blackened crust.

Rest the Chicken
Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
Making the Mango Salsa

Combine Ingredients
In a bowl, mix together the diced mango, red onion, red bell pepper, chopped cilantro, lime juice, and salt.

Adjust Seasoning
Taste the salsa and adjust the salt or lime juice if needed.
Assembling the Wrap

Prepare the Tortilla
Lay out a large tortilla on a flat surface.

Place a layer of shredded lettuce in the center of the tortilla, followed by sliced blackened chicken and a generous spoonful of mango salsa.

Optional Sour Cream
If desired, add a dollop of sour cream on top.

Fold the sides of the tortilla over the filling, then roll it tightly from the bottom to the top to form a wrap.
