For the Blackened Chicken

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Rub each piece with olive oil and generously coat with blackening seasoning.

Cook the Chicken
Heat a skillet over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is cooked through and has a blackened crust. Remove from heat and let rest for 5 minutes before slicing.
For the Spicy Peanut Thai Sauce

Mix the Sauce
In a bowl, combine peanut butter, soy sauce, lime juice, sriracha sauce, water, and honey. Whisk until smooth and well combined. Adjust the consistency with more water if needed.
For the Mango Salsa

Prepare the Salsa
In a mixing bowl, combine diced mango, red onion, cilantro, lime juice, and salt. Toss gently to combine and set aside.

Assemble the Wraps
On each bib lettuce leaf, place a few slices of blackened chicken, a spoonful of mango salsa, and drizzle with spicy peanut Thai sauce. Top with chopped peanuts for added crunch.
