Beef Tenderloin

Prepare the Beef
Remove the beef tenderloin from the refrigerator and let it come to room temperature for about 30 minutes.

Preheat Oven
Preheat your oven to 400°F (200°C).

Season the Beef
In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the beef tenderloin.

Sear the Beef
In a large skillet over medium-high heat, sear the beef tenderloin on all sides until browned (about 3-4 minutes per side).

Roast the Beef
Transfer the beef to a baking dish and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Rest the Beef
Remove from the oven and let the beef rest for 10 minutes before slicing.

Activate Yeast
In a small bowl, combine warm milk (110°F/43°C) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture, melted butter, and egg. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape Rolls
Punch down the risen dough, divide it into 12 equal pieces, and shape each piece into a ball. Place them on a greased baking sheet.

Second Rise
Cover the rolls with a cloth and let them rise for another 30 minutes.

Bake Rolls
Preheat your oven to 375°F (190°C). Bake the rolls for 15-20 minutes or until golden brown.

Remove from the oven, let cool slightly, and serve warm with the beef tenderloin.
