Prepare the Sauce
In a mixing bowl, combine 1 cup of mayonnaise, 1 cup of sweet chili sauce, 2 tablespoons of sriracha sauce, and 1 tablespoon of lime juice. Stir well until the sauce is smooth and evenly mixed. Set aside.

Prepare the Shrimp
In a shallow bowl, combine 1 cup of all-purpose flour, 1 cup of cornmeal, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well. In another shallow bowl, pour in 1 cup of buttermilk and add 1 beaten egg. Dip each shrimp first into the buttermilk mixture, then into the flour mixture, ensuring they are fully coated.

Fry the Shrimp
In a large skillet, heat 2 cups of oil over medium-high heat. Once the oil is hot, carefully add the coated shrimp in batches, making sure not to overcrowd the pan. Fry the shrimp for about 3-4 minutes or until golden brown and crispy. Remove them from the oil and place them on a paper towel-lined plate to drain any excess oil.

Assemble the Po-Boy
Slice the French bread loaves lengthwise, creating a pocket for the filling. Spread a generous amount of the Bang Bang sauce inside each loaf. Layer in the fried shrimp, followed by shredded lettuce and slices of tomato. Drizzle more Bang Bang sauce on top if desired.
