    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your oven to 400°F (200°C). Season both sides of the filet mignon generously with salt and black pepper.

    In an oven-safe skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Once the oil is hot, gently place the filet mignon into the pan. Sear for about 3-4 minutes on one side until a brown crust forms. Avoid moving the steak during this time.

    Flip the steak and add butter, rosemary, and crushed garlic cloves to the pan. Use a spoon to baste the steak with the melted butter and the juices in the pan for an additional 2-3 minutes.
