Cooking Directions
1. Prepare the clams
In a large pot, add the fresh clams and cover them with water. Bring to a boil and cook until the clams open. Remove the clams, chop them, and set aside. Reserve the broth.
2. Cook the bacon
In the same pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside, leaving the bacon fat in the pot.
3. Sauté the vegetables
Add butter to the pot with the bacon fat. Sauté the onion and celery until soft, about 5 minutes.
4. Add potatoes and broth
Stir in the potatoes and the reserved clam broth along with chicken broth. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
5. Combine ingredients
Add the chopped clams, heavy cream, thyme, salt, and black pepper. Stir well and heat through for about 5 minutes.
