Preparation Steps
Cook the Macaroni
In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Mixture
In a large bowl, combine the cooked macaroni, lobster meat, cheddar cheese, and Monterey Jack cheese. Mix until well combined.
Prepare the Breading Station
In separate bowls, set up your breading station: one with flour mixed with garlic powder, onion powder, paprika, salt, and black pepper; one with beaten eggs; and one with panko bread crumbs.
Form the Bites
Take a spoonful of the mac and cheese mixture and form it into a small ball or bite-sized shape. Repeat with the remaining mixture.
Batter the Bites
Coat each mac and cheese bite in the seasoned flour, then dip in the beaten eggs, and finally coat with panko bread crumbs. Ensure each bite is fully coated.
Fry the Bites
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the bites in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
Serve
Serve the fried lobster mac & cheese bites hot with vodka sauce for dipping.
