Preparation Directions
Prepare the Tartar Sauce
In a bowl, mix together mayonnaise, chopped dill pickles, lemon juice, and chopped parsley. Stir until well combined. Refrigerate until ready to use.
Prepare the Fish
In a mixing bowl, combine flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well.
Batter the Fish
Dip each cod fillet into the dry mixture, then into the beer, and back into the dry mixture to coat completely.
Fry the Fish
In a large skillet, heat vegetable oil over medium-high heat. Fry the battered cod fillets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwich
To assemble, place a fried cod fillet on the bottom half of each brioche bun. Top with house tartar sauce and the top half of the bun.
