Prepare the Cheesecake

Preheat oven to 325°F (160°C). In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add sour cream and vanilla extract, mixing until well combined. Add eggs one at a time, mixing well after each addition.

Bake the Cheesecake

Pour the cheesecake batter into the prepared chocolate cookie crust. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.

Chill the Cheesecake

Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for best results.

Make the Chocolate Ganache

In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.

Assemble the Cheesecake

Pour the chocolate ganache over the chilled cheesecake, spreading it evenly. Top with crushed peanuts and let set in the refrigerator for 30 minutes.

Slice the cheesecake and serve with whipped cream and a drizzle of caramel sauce on top.
