    Marinate the Steak (Optional)

    If you wish to marinate your Porterhouse steak, combine minced garlic cloves, lemon juice, and Worcestershire sauce in a bowl. Place the steak in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

    Remove from Fridge

    If marinated, remove the steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Preheat the Grill or Oven

    Preheat your grill to high heat (about 450°F/232°C) or preheat your oven to 400°F (204°C) for oven cooking.

Cooking

    Season the Steak

    Pat the steak dry with paper towels and generously season both sides with kosher salt and black pepper.

    Sear the Steak

    In a large cast-iron skillet or on the grill, heat olive oil over medium-high heat. When the oil is hot, add the seasoned Porterhouse steak. Sear for about 4-5 minutes on each side until a brown crust forms.

    Add Herbs and Butter

    During the last minute of cooking, add butter, rosemary, and thyme to the pan. Use a spoon to baste the melted butter over the steak for enhanced flavor.

    Check Doneness

    Use a meat thermometer to check for your desired doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well.

    Rest the Steak

    Once cooked to your liking, remove the steak from heat and let it rest on a cutting board for at least 10 minutes before slicing. This allows the juices to redistribute.

    Slice and Serve

    After resting, slice the Porterhouse steak against the grain and serve immediately. Enjoy with your favorite side dishes!
