Steak Preparation

  1. 1

    Season the Steak

Generously season both sides of the ribeye steaks with salt and black pepper. Let them sit at room temperature for about 30 minutes to ensure even cooking.

  2. 2

    Heat the Grill or Pan

Heat a grill or a heavy skillet over high heat. Add olive oil to the pan or brush it on the grill grates.

  3. 3

    Cook the Steak

Place the steaks on the hot grill or skillet. Cook for about 4-5 minutes on one side without moving them to get a good sear.

  4. 4

    Flip the Steak

Flip the steaks and add butter and rosemary to the pan. Cook for another 4-5 minutes for medium-rare, basting the steak with melted butter.

  5. 5

    Rest the Steak

Remove the steaks from the heat and let them rest for 5-10 minutes before slicing to allow the juices to redistribute.

Side Preparation

  1. 6

    Prepare the Potatoes

Wash and scrub the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

  2. 7

    Make the Mashed Potatoes

Mash the boiled potatoes with sour cream and chives until smooth and creamy. Season with salt and pepper to taste.

  3. 8

    Prepare the Asparagus

Trim the ends of the asparagus. In the last 5 minutes of the potato boiling, add the asparagus to the pot to blanch.

  4. 9

    Sauté the Garlic

In a skillet, heat some olive oil and sauté minced garlic until fragrant. Toss in the blanched asparagus and sauté for an additional 2-3 minutes.
