Crab and Lobster Filling

    Prepare the Seafood

    In a mixing bowl, combine the chopped lobster meat and picked crab meat.

    Add Flavorings

    To the seafood mixture, add the chopped chives, Dijon mustard, lemon juice, salt, and black pepper. Gently mix until well combined. Set aside.

Chardonnay Cream Sauce

    Sauté Shallots

    In a saucepan, melt the butter over medium heat. Add the finely chopped shallots and sauté until they become translucent, about 3-4 minutes.

    Add Wine and Reduce

    Pour in the Chardonnay wine and let it simmer until reduced by half, approximately 5-7 minutes.

    Finish the Sauce

    Stir in the heavy cream, salt, and white pepper. Cook for an additional 5 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside.

Napoleon Assembly

    Prepare Phyllo Pastry

    Preheat the oven to 375°F (190°C). On a clean surface, lay out one sheet of phyllo pastry and brush it lightly with olive oil. Layer another sheet on top and repeat the process until you have 4 layers.

    Cut and Bake

    Using a sharp knife, cut the layered phyllo into squares or rectangles. Place them on a baking sheet and bake in the preheated oven for 10-12 minutes, or until golden and crispy.

    Layer the Filling

    Once the phyllo is baked, take one layer and place it on a serving plate. Spoon a portion of the crab and lobster filling on top, then add another layer of baked phyllo. Repeat until all filling is used, finishing with a layer of phyllo.

Serving

    Drizzle with Sauce

    Pour the Chardonnay cream sauce over the assembled Napoleon. Optionally, garnish with whole chives and serve with lemon wedges on the side.
