Steak Preparation

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Generously season each steak with kosher salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over high heat until it's shimmering. Place the steaks in the skillet and sear for 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for at least 5 minutes before serving.

Garlic Herb Butter Preparation

    Make the Garlic Herb Butter

    In a bowl, combine softened unsalted butter, minced garlic, chopped parsley, chopped thyme, and lemon juice. Mix until well blended.

    Serve the Butter

    Spoon the garlic herb butter over the rested steaks just before serving.

Sides Preparation

    Prepare the Asparagus

    Preheat the oven to 400°F (200°C). Place trimmed asparagus on a baking sheet, drizzle with olive oil, and sprinkle with salt. Toss to coat.

    Roast the Asparagus

    Roast in the preheated oven for 12-15 minutes until tender and slightly crispy.

    Prepare the Potatoes

    Toss potato wedges with olive oil, paprika, garlic powder, and salt in a large bowl until evenly coated.

    Roast the Potatoes

    Spread potato wedges on a baking sheet and roast in the oven alongside the asparagus for about 25-30 minutes, or until golden and crispy.
