Method

Preparing the French Fries

    Cut the Potatoes

    Wash and peel the potatoes. Cut them into even-sized sticks, about 1/4 inch thick.

    Soak the Fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Cooking the Steak

    Rub the flank steak with olive oil, salt, and black pepper.

    Heat a grill or skillet over medium-high heat. Cook the steak for approximately 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes, then slice thinly against the grain.

Sauteing Onions and Mushrooms

Assembling the Sandwich

    Toast the sourdough bread slices until golden brown.

    On each slice of toasted sourdough, layer slices of steak, followed by the sautéed onions and mushrooms. Top with smoked gouda cheese.
