Preparation

    Prepare the Steak

    Take the New York Strip steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook more evenly.

    Season the Steak

    Generously season both sides of the steak with salt and black pepper. Use about 1 tsp of each for a 12-16 oz steak.

Cooking

    Heat the Pan

    In a large skillet or frying pan, heat the olive oil over high heat until it begins to shimmer. This usually takes about 2-3 minutes.

    Sear the Steak

    Once the oil is hot, carefully place the seasoned steak in the pan. Sear for about 4-5 minutes on one side without moving it to develop a nice crust.

    Flip the Steak

    After 4-5 minutes, flip the steak using tongs. If using garlic and rosemary, add them to the pan now along with butter.

    Baste the Steak

    As the second side cooks for another 4-5 minutes, tilt the pan slightly and spoon the melted butter over the steak to enhance flavor.

    Check for Doneness

    Use a meat thermometer to check the internal temperature: 125°F for medium-rare, 135°F for medium, and 145°F for medium-well.

Resting

    Rest the Steak

    Once the steak reaches your desired doneness, remove it from the pan and let it rest for 5-10 minutes on a cutting board. This allows the juices to redistribute.

Serving

    Slice and Serve

    After resting, slice the steak against the grain and serve it with your choice of sides. Enjoy!
