Method
Crust
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
- 2
Bake the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake in the preheated oven for about 8-10 minutes until lightly golden. Remove from the oven and let it cool.
Filling
- 3
Prepare the Filling
In a large mixing bowl, combine the sweetened condensed milk, key lime juice, egg yolks, and lime zest. Whisk until the mixture is smooth and well blended.
- 4
Fill the Crust
Pour the filling into the cooled crust, spreading it evenly. Bake in the oven at 350°F (175°C) for 15-20 minutes until the filling is set but still slightly jiggly in the center.
- 5
Cool the Pie
Remove the pie from the oven and allow it to cool to room temperature, then refrigerate for at least 2 hours to fully set.
Berry Coulis
- 6
Prepare the Coulis
In a small saucepan, combine the fresh mixed berries, granulated sugar, and water. Cook over medium heat, stirring gently until the berries break down and the mixture begins to simmer, about 5-7 minutes.
- 7
Blend and Strain
Remove from heat and let cool slightly. Blend the mixture until smooth, then strain through a fine mesh sieve to remove seeds. Chill in the refrigerator until ready to serve.
Garnish and Serve
- 8
Garnish the Pie
Once the pie is set, top with whipped cream and garnish with lime slices.
- 9
Serve the Pie
Slice the pie and serve each piece with a drizzle of berry coulis on the plate.
