Method

Preparation

  1. 1

    Season the Filet Mignon

Pat the filet mignon dry with paper towels. Rub the olive oil over the steak, then generously season both sides with salt and black pepper. If using, add minced garlic and herbs on top for additional flavor.

Cooking

  1. 2

    Preheat the Pan

Heat a heavy skillet or cast-iron pan over medium-high heat for about 5 minutes until it is hot.

  2. 3

    Sear the Steak

Once the pan is hot, carefully place the filet mignon in the pan. Sear for about 4-5 minutes without moving it until a golden crust forms on the bottom.

  3. 4

    Flip and Cook

Using tongs, flip the filet mignon and cook for another 3-4 minutes for medium-rare, or longer if desired. If using butter, add it to the pan during the last minute of cooking and spoon the melted butter over the steak.

  4. 5

    Rest the Steak

Remove the filet mignon from the pan and transfer it to a plate. Cover loosely with aluminum foil and let it rest for at least 5 minutes before slicing.
