Method

Preparing the Lamb Rack

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Season the Lamb

In a small bowl, mix together olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Rub this mixture all over the lamb rack.

Roasting the Lamb

  1. 3

    Roast the Lamb

Place the seasoned lamb rack on a baking tray and roast in the preheated oven for 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

Chop the carrots into bite-sized pieces, trim the asparagus, and slice the red onion into wedges.

  2. 5

    Roast the Vegetables

Toss the vegetables with olive oil, salt, and pepper. Place them on a separate baking tray and roast in the oven alongside the lamb for about 20-25 minutes, or until tender.

Making the Glaze

  1. 6

    Combine the Glaze Ingredients

In a small bowl, whisk together honey, balsamic vinegar, and Dijon mustard until smooth.

  2. 7

    Glaze the Lamb

During the last 5 minutes of roasting, brush the glaze over the lamb rack to create a glossy finish.

Finishing Touches

  1. 8

    Rest the Lamb

Once the lamb is done, remove it from the oven and let it rest for 10 minutes before slicing.

  2. 9

    Serve

Slice the lamb rack into individual chops and serve with the roasted vegetables on the side.
