Method

Preparing the Pork Chops

    Season the Pork Chops

    Pat the double cut pork chops dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the pork chops and sear for about 4-5 minutes on each side until a golden-brown crust forms. Use tongs to flip them carefully.

    Cook the Pork Chops

    Lower the heat to medium and continue to cook the pork chops for an additional 10-15 minutes, or until the internal temperature reaches 145°F (63°C). Remove from skillet and let rest for 5 minutes before slicing.

Making the Grain Mustard Sauce

    Sauté Shallots

    In the same skillet used for the pork chops, reduce heat to medium and add butter. Once melted, add finely chopped shallots and sauté for about 2-3 minutes until they become translucent.

    Add Chicken Stock

    Pour in the chicken stock and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let it reduce by half, about 5-7 minutes.

    Stir in Mustard and Cream

    Once reduced, stir in the grain mustard and heavy cream. Cook for another 2-3 minutes until the sauce thickens slightly.

    Finish with Parsley

    Remove the sauce from heat and stir in chopped fresh parsley. Season with additional salt and pepper to taste.
