Method
Preparation
- 1
Chill the Beef
Wrap the beef tenderloin in plastic wrap and place it in the freezer for about 30 minutes. This will make it easier to slice thinly.
- 2
Prepare the Ingredients
While the beef is chilling, gather all other ingredients: capers, parmesan cheese, olive oil, lemon, arugula, salt, and black pepper.
Slicing and Assembly
- 3
Slice the Beef
Once the beef is firm but not frozen, remove it from the freezer. Using a sharp knife, slice the beef as thinly as possible against the grain.
- 4
Plate the Beef
Arrange the beef slices in a circular pattern on a large plate, overlapping them slightly.
- 5
Add Capers and Cheese
Evenly scatter the capers over the sliced beef. Use a vegetable peeler to shave the parmesan cheese over the top of the beef and capers.
- 6
Drizzle with Olive Oil
Drizzle the extra virgin olive oil over the beef and toppings, ensuring an even coating.
