Preparing the Lobster

    Boiling the Lobsters

    Bring a large pot of salted water to a boil. Add the live lobsters and cook for about 5-7 minutes until they turn bright red. Remove them and let cool slightly.

    Halving the Lobsters

    Once cool, place the lobsters on a cutting board. Using a sharp knife, carefully split each lobster in half lengthwise.

Preparing the Stuffing

    Making the Stuffing

    In a bowl, combine chopped preserved lemons (rinsed and seeds removed), fresh bread crumbs, olive oil, fresh thyme, and grated Parmesan cheese. Mix well until all ingredients are combined.

Broiling the Lobster

    Prepping for Broiling

    Preheat your broiler to high. Place the lobster halves on a baking sheet, cut side up. Melt the unsalted butter and mix it with minced garlic, fresh parsley, salt, and black pepper.

    Stuffing the Lobster

    Spoon the preserved lemon stuffing into the hollowed-out lobster halves, pressing down gently to pack it in.

    Broiling

    Drizzle the garlic-butter mixture over the stuffed lobsters. Place under the broiler for about 5-7 minutes, until the stuffing is golden and the lobster meat is cooked through.

Serving

    Plating the Dish

    Remove the lobsters from the oven and let them cool for a minute. Serve immediately, garnished with additional parsley if desired.
