Base Ingredients

Method

Preparation of Stock

  1. 1

    Make Lobster Stock

In a large pot, combine lobster shells, water, onion, celery, carrot, garlic, bay leaves, and black peppercorns. Bring to a boil over medium-high heat.

  2. 2

    Simmer

Once boiling, reduce the heat to low and let the mixture simmer for about 30 minutes to extract flavors from the shells.

  3. 3

    Strain Stock

After simmering, strain the stock through a fine mesh sieve into a bowl, discarding the solids. Set the stock aside.

Soup Preparation

  1. 4

    Combine Ingredients

In the same pot, add the strained lobster stock along with heavy cream, tomato paste, white wine, and salt to taste.

  2. 5

    Heat the Soup

Bring the mixture to a gentle simmer over medium heat, stirring occasionally to combine all ingredients thoroughly.

  3. 6

    Add Lobster Meat

Once the soup is heated through, add the cooked lobster meat. Stir well to incorporate.

  4. 7

    Finish and Serve

Allow the bisque to simmer for an additional 5-10 minutes. Serve hot, garnished with fresh parsley.
