    Pat the bone-in ribeye steak dry with paper towels. This step ensures a good sear. Sprinkle kosher salt, freshly ground black pepper, garlic powder, and dried thyme evenly on both sides of the steak. Let it sit at room temperature for at least 30 minutes to allow the seasoning to penetrate.

    If using a grill, preheat it to high heat (about 450°F to 500°F). If using an oven, preheat to 450°F and prepare a cast-iron skillet or oven-safe pan.

Cooking

    Drizzle olive oil over the steak. If using a grill, place the steak directly on the hot grill grates. Sear for about 4-5 minutes on each side for medium-rare, or until a crust forms and the internal temperature reaches 130°F.

    If using an oven, after searing the steak on both sides (about 3-4 minutes per side), transfer the skillet into the preheated oven. Cook for an additional 5-10 minutes, depending on the desired doneness.

    Once cooked to your preference, remove the steak from the grill or oven and let it rest for 10 minutes. This allows the juices to redistribute.
