    Season the Steak

    Remove the bone-in filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes. Pat it dry with paper towels. Generously season both sides of the steak with salt and black pepper.

    Prepare the Ingredients

    Mince the garlic cloves and set aside. Rinse the fresh rosemary and have it ready for the cooking process.

    Sear the Steak

    In a cast-iron skillet, heat the olive oil over medium-high heat until it shimmers. Add the seasoned bone-in filet mignon to the skillet, searing it for approximately 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Add Aromatics

    During the last 2 minutes of cooking, add the minced garlic, fresh rosemary, and butter to the skillet. Baste the steak with the melted butter and oil mixture using a spoon, enhancing the flavor.

    Rest the Steak

    Once cooked to your liking, remove the steak from the skillet and transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for 5-10 minutes. This allows the juices to redistribute.

    After resting, slice the bone-in filet mignon against the grain. Serve it on a plate, drizzled with the pan juices and accompanied by your choice of sides.
