Cook sausages

Place a large frying pan over medium heat and add 1 tablespoon vegetable oil. Add the 4 sausages and cook for 12–15 minutes, turning every 2–3 minutes until evenly browned and cooked through (internal temperature about 70°C/160°F). Reduce heat if they brown too quickly.

Cook bacon

While sausages cook, in a separate skillet set to medium-high, add the streaky bacon slices in a single layer. Fry for about 3–5 minutes per side until crispy or to your liking. Transfer to a plate lined with paper towel to drain.

Fry eggs

After bacon is done, wipe the egg skillet clean, reduce heat to medium-low and add 1 tablespoon butter. Crack eggs into the pan (or crack into a small bowl first and then slide in). Fry until the whites are set and edges are slightly crisp, 3–4 minutes for runny yolks; for over-easy flip gently and cook 30–60 seconds more. Season with a pinch of salt and pepper. Keep warm on very low heat or cover loosely.

Roast tomatoes

Preheat oven to 200°C (400°F). Halve the 2 ripe tomatoes horizontally, place cut-side up on a small baking tray, drizzle with 1 tablespoon olive oil and sprinkle 1/2 tsp salt and 1/4 tsp black pepper. Roast for 12–15 minutes until soft and slightly caramelized.

Heat beans

While tomatoes roast, pour the 400 g canned baked beans into a small saucepan. Heat over low-medium heat, stirring occasionally, for 5–8 minutes until simmering gently. If desired, stir in 1 teaspoon Worcestershire sauce. Keep warm on lowest heat until serving.

Mushrooms

Sauté mushrooms

Trim and slice the 200 g mushrooms. Heat a skillet over medium heat and add 1 tablespoon butter. When melted and foaming, add the mushrooms in a single layer (cook in batches if necessary). Sauté without disturbing for 2–3 minutes to brown, then stir and cook another 2–3 minutes until tender. Add the minced garlic in the last 30 seconds, season with 1/4 tsp salt and 1/8 tsp black pepper, then remove from heat and stir in 1 tablespoon chopped parsley.

Toast brioche

Butter the 4 slices of brioche lightly on one side. Toast in a clean skillet over medium heat buttered-side down, or in a toaster/grill, until golden and crisp, about 1–2 minutes per side in a skillet or 2–3 minutes in a toaster. Keep warm.

Plate the breakfast

Divide sausages, bacon, mushrooms, roasted tomatoes, and toasted brioche evenly across 2 plates (or serve all on one large platter). Spoon the warmed baked beans into a small serving dish or directly onto each plate. Place the fried eggs on top or alongside. Garnish mushrooms with a little extra parsley if desired. Serve immediately while hot.
