Chill and prepare service

Place a shallow serving bowl or platter on a larger bowl filled with crushed ice to create an ice bed. Spread the crushed ice to create a stable, chilled surface. Put a smaller chilled dish or ramekin into the center for the caviar tin or jar. Keep caviar refrigerated until just before serving; remove it from the fridge 5–10 minutes beforehand so it's not too cold to taste but still chilled.

Prepare accoutrements

Put crème fraîche in a small bowl and stir in the finely chopped shallot, 1 tablespoon of chives, a pinch (about 1/8 tsp) of salt, and a few grinds of pepper. Taste and adjust seasoning lightly — the caviar is salty, so keep additions subtle. Arrange chopped egg white and egg yolk in separate small bowls. Place lemon wedges and the remaining chives nearby. Keep spoons for guests: mother-of-pearl or bone spoons preserve flavor best; avoid silver if possible.

Prepare blinis or toast

If using frozen blinis, warm them briefly in a 300°F (150°C) oven for 3–5 minutes. If using fresh bread slices or brioche, lightly toast until warm and slightly crisp. Optionally brush with melted unsalted butter (about 2 tbs melted) and return to the oven for 1–2 minutes to set. Transfer to a plate and keep warm covered with a clean towel.

Open and transfer caviar

Using a clean spoon, open the caviar tin or jar and inspect for any stray membrane pieces; remove gently with the spoon if present. Transfer the caviar gently into the chilled serving dish or leave in the tin and set the tin on the ice bed. Avoid pressing or mashing the eggs — preserve their shape and texture.

Serve

Place the caviar on the ice bed centrally with the accoutrement bowls arranged around it. Offer small spoons and blinis/toasts. Instruct guests to place a small dollop (about 1/2 teaspoon) of crème fraîche on a blini, add a spoonful (4–6 grams) of caviar, and garnish with a tiny pinch of chives or egg as desired. Squeeze lemon sparingly — a light touch of acid brightens flavors. Keep leftover caviar refrigerated in its original tin, covered, and consume within 2–3 days for best quality.
