Prepare the Plantains
Peel the plantains and slice them diagonally into about 1/2 inch thick pieces.

Fry the Plantains
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the plantain slices in batches and fry until golden brown, about 3-4 minutes on each side. Remove and place on paper towels to drain excess oil. Sprinkle with salt and pepper.

Assemble the Nachos
On a large serving platter, layer the fried plantains. Top with shredded cheese, black beans, diced red bell pepper, your choice of meat, and drizzle with mojo sauce.
