Prepare the Ropa Vieja or Pork
In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and bell pepper. Sauté until soft. Add the Ropa Vieja or pork and season with cumin, salt, and black pepper. If using Ropa Vieja, cook until tender and shred. If using pork, cook until fully cooked and diced.

Cook the Rice
In a separate pot, cook the white rice according to package instructions, usually about 20 minutes.

Prepare the Red Beans
If using canned red beans, simply heat them in a small pot. If using dried beans, soak them overnight and cook until tender.

Cook the Sausage
Slice the sausage and cook it in a pan over medium heat until browned.

Fry the Plantains
Peel and slice the sweet plantains diagonally. In a frying pan, heat oil and fry the plantains until golden brown on both sides.

Cook the Yucca
Peel the yucca and cut it into chunks. Boil in salted water for about 20-25 minutes until tender. Drain and serve.

Assemble the Plate
On a large platter, arrange the white rice, red beans, sausage, fried sweet plantains, and yucca fries. Top with the prepared Ropa Vieja or pork.
