    Prepare the Plantains

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced plantains and cook until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

    In the same skillet, add the remaining olive oil. Sauté the red onions until translucent, then add the carrots, zucchini, asparagus, and mushrooms. Cook for about 5-7 minutes until the vegetables are tender.

    Add the cooked brown rice and black beans to the skillet with the vegetables. Pour in the soy sauce, salt, and black pepper. Stir well and cook for an additional 3-5 minutes, until heated through.

    In a bowl, combine mixed salad greens with olive oil and lemon juice. Toss to coat.
