    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into thick fries and soak them in cold water for at least 30 minutes. Drain and pat dry.

    Season and Bake

    Toss the potato fries with olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through until golden and crispy.

    Cook the Chorizo and Vegetables

    While the fries are baking, heat a skillet over medium heat. Add the chorizo and cook until browned. Remove the chorizo, and in the same skillet, add more olive oil if needed, then sauté the bell peppers and onions until softened.

    Assemble the Chorizo Fries

    Once the fries are done, remove them from the oven and sprinkle the shredded cheddar cheese over the hot fries. Top with the cooked chorizo and sautéed peppers and onions. Drizzle with Bodega or Cuban sauce.

    Serve the chorizo fries hot, garnished with additional sauce if desired.
