Prepare the ingredients
Slice the chicken breast into thin strips, chop the onion, and slice the bell peppers. Mince the garlic.

Sauté the vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, and sauté for about 3-4 minutes until translucent. Add the sliced red and green bell peppers, and cook for another 3 minutes.

Cook the chicken
Add the sliced chicken to the skillet, and season with salt and black pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.

Add curry and coconut milk
Stir in the minced garlic and curry powder, and cook for an additional minute. Pour in the coconut milk, and bring the mixture to a gentle simmer.

Simmer
Reduce the heat to low, and let the chicken simmer in the curry sauce for about 10 minutes, allowing the flavors to meld.

Remove from heat, garnish with fresh cilantro, and serve hot over rice or with your favorite side.
