    Prepare the Plantains

    Peel the sweet plantains and slice them diagonally into thick pieces. In a skillet, heat butter over medium heat and fry the plantain slices until golden brown on both sides. Remove from skillet and set aside.

    Cook the Meat

    In the same skillet, cook your choice of meat (bacon, ham, or chorizo) until crispy. Remove and set aside.

    Poach the Eggs

    In a saucepan, bring 4 cups of water to a gentle simmer. Add salt. Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

    Assemble the Dish

    On a plate, place 2 warm arepas. Top each arepa with a poached egg, a slice of your cooked meat, and season with black pepper. Serve with the fried sweet plantains on the side.
