Preparation of Ingredients

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.

    Prepare the Vegetables

    Slice the leeks thinly, discarding the dark green tops. Dice the plum tomatoes and mince the garlic.

    Prepare the Baguette

    Slice the baguette into 1-inch thick pieces. Spread butter on one side of each slice.

Cooking the Mussels

    Sauté the Leeks and Garlic

    In a large pot, heat olive oil over medium heat. Add sliced leeks and minced garlic, sautéing until soft and fragrant, about 5 minutes.

    Add Tomatoes and Mussels

    Add the diced plum tomatoes to the pot, stirring to combine. Then, add the cleaned mussels, stirring gently.

    Add Brandy and Cream

    Pour in the brandy and bring to a simmer. Once simmering, add heavy cream, stirring well. Cover the pot and cook for about 5-7 minutes or until the mussels have opened.

    Season the Dish

    Season with salt and black pepper to taste. Stir in fresh parsley before serving.

    Toast the Baguette

    In a skillet, place the buttered baguette slices butter-side down and toast until golden brown, about 2-3 minutes. Flip and toast the other side if desired.
