Oysters Preparation

Shuck the Oysters
Using a shucking knife, carefully open each oyster by inserting the blade into the hinge of the shell. Twist the knife to open the shell, and slide the knife along the top shell to detach the muscle. Remove the top shell and place the oyster on the half shell without spilling any of the liquid.

Arrange the Oysters
Place the freshly shucked oysters on a platter filled with crushed ice to keep them chilled.
Mignonette Sauce Preparation

Mix the Mignonette
In a small bowl, combine the red wine vinegar, finely chopped shallots, and freshly cracked black pepper. Stir well and let it sit for at least 10 minutes to allow the flavors to meld.
Cocktail Sauce Preparation

Prepare the Cocktail Sauce
In another bowl, mix together the ketchup, prepared horseradish, lemon juice, Worcestershire sauce, and hot sauce. Adjust the hot sauce to taste and stir until well combined.
