Preparing the Lobster Mixture

Cook the Lobster
If using live lobsters, steam or boil them for 8-10 minutes until they are bright red. Remove the meat from the shells and chop into bite-sized pieces.

Mix Ingredients
In a mixing bowl, combine the cooked lobster meat, mayonnaise, lemon juice, finely chopped celery, salt, black pepper, and chopped chives. Stir gently to combine without breaking up the lobster meat.

Chill
Cover the bowl with plastic wrap and refrigerate the lobster mixture for at least 30 minutes to allow the flavors to meld.
Preparing the Rolls

Toast the Rolls
In a skillet over medium heat, melt the unsalted butter. Once melted, add the split-top rolls and toast them on both sides until golden brown, about 2-3 minutes per side.
Assemble the Lobster Rolls

Fill the Rolls
If using, place a lettuce leaf in each toasted roll. Spoon the chilled lobster mixture generously into each roll.

Garnish
Sprinkle paprika over the top of the filled rolls for added flavor and color, if desired.

Serve
Serve the lobster rolls immediately with chips or a side salad.
