Calamari Preparation

Prepare the Calamari
In a large bowl, combine the cleaned calamari rings with salt, black pepper, garlic powder, and paprika. Toss until the calamari is evenly coated.

Set Up Breading Station
In three separate shallow dishes, place the flour in the first dish, beaten eggs in the second, and breadcrumbs in the third.

Bread the Calamari
Take each calamari ring, dip it into the flour first, shaking off the excess, then into the beaten eggs, and finally into the breadcrumbs. Ensure each piece is well coated. Set aside on a plate.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain on paper towels.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes, oregano, sugar, salt, and black pepper. Stir to combine and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Once the sauce has thickened, remove it from heat and set aside. Garnish with fresh chopped basil before serving.

Serve the crispy calamari hot with the marinara sauce on the side for dipping. Enjoy!
