Preparation
- 1
Prepare the clams
If using fresh clams, scrub them under cold water to remove any sand. If using canned or frozen clams, drain and rinse them.

Cooking

- 4
Add flour
Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for an additional 2 minutes to eliminate the raw flour taste.
- 5
Add liquids
Gradually add the chicken broth while stirring. Then add the diced potatoes, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat to a simmer.
- 6
Simmer
Let the chowder simmer for about 15-20 minutes, or until the potatoes are tender.
- 7
Add clams and cream
Stir in the prepared clams, heavy cream, and milk. Cook for an additional 5 minutes, ensuring it's heated through but not boiling.
- 8
Finish and serve
Remove the bay leaf, taste and adjust seasoning if necessary. Garnish with chopped parsley before serving.
