Prepare the Tuna
Pat the Ahi tuna fillets dry with paper towels. Season both sides with salt and black pepper. In a shallow dish, combine soy sauce and wasabi paste. Marinate the tuna in the mixture for about 15 minutes.

Coat with Sesame Seeds
Spread the sesame seeds on a plate. Remove the tuna from the marinade and press each fillet into the sesame seeds to coat all sides.

Sear the Tuna
Heat a non-stick skillet over medium-high heat. Add a splash of oil, and once hot, add the sesame-crusted tuna. Sear for 1-2 minutes on each side until the outside is golden brown and the inside remains rare. Remove from heat and let it rest for a few minutes.

Assemble the Taco Sandwich
Slice the seared tuna into thin strips. Place a few strips on each tortilla, top with a generous amount of pineapple salsa, fold the tortillas over, and serve immediately.
