Tuna Preparation

Tortilla and Salsa

Method

Tuna Preparation

  1. 1

    Prepare the Tuna

Pat the Ahi tuna fillets dry with paper towels. Season both sides with salt and black pepper. In a shallow dish, combine soy sauce and wasabi paste. Marinate the tuna in the mixture for about 15 minutes.

  2. 2

    Coat with Sesame Seeds

Spread the sesame seeds on a plate. Remove the tuna from the marinade and press each fillet into the sesame seeds to coat all sides.

  3. 3

    Sear the Tuna

Heat a non-stick skillet over medium-high heat. Add a splash of oil, and once hot, add the sesame-crusted tuna. Sear for 1-2 minutes on each side until the outside is golden brown and the inside remains rare. Remove from heat and let it rest for a few minutes.

Tortilla and Salsa

  1. 4

    Prepare the Pineapple Salsa

If using fresh pineapple, cut it into small chunks. Finely chop the red onion, cilantro, and jalapeño (removing seeds for less heat if desired). In a bowl, combine pineapple, red onion, cilantro, jalapeño, and lime juice. Mix well and set aside.

  2. 5

    Heat the Tortillas

In a dry skillet or on a grill, heat the yellow corn tortillas for about 30 seconds on each side until warm and pliable.

  3. 6

    Assemble the Taco Sandwich

Slice the seared tuna into thin strips. Place a few strips on each tortilla, top with a generous amount of pineapple salsa, fold the tortillas over, and serve immediately.
