Burger Patty Preparation

    Prepare the Meat Mixture

    In a large mixing bowl, combine ground chuck, ground brisket, and ground short rib. Mix well until all meats are evenly combined.

    Season the Mixture

    Add salt and black pepper to the meat mixture. Knead the mixture gently until the seasoning is fully incorporated.

    Form the Patties

    Divide the meat mixture into two equal parts and shape each into an 8 oz patty, about 1 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Cooking the Burger

    Preheat the Grill or Skillet

    Preheat your grill or skillet over medium-high heat for about 5 minutes.

    Cook the Patties

    Place the formed patties on the hot grill or skillet. Cook for about 4-5 minutes on one side, then flip and cook for an additional 3-4 minutes, or until the internal temperature reaches 160°F (71°C) for medium doneness.

Assembling the Burger

    Prepare the Toppings

    While the patties are cooking, wash the lettuce leaves and slice the tomato and red onion.

    Toast the Brioche Roll

    Optional: Lightly toast the brioche roll on the grill or in a toaster until golden brown.

    Assemble the Burger

    Place the cooked patty on the bottom half of the brioche roll. Top with lettuce leaves, tomato slices, red onion slices, and a generous spoonful of boca bacon jam. Place the top half of the roll on the burger.
