Pulled BBQ Chicken Directions
- 1
Cook the Chicken
In a slow cooker, place the chicken breasts and pour half of the BBQ sauce over them. Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shreds.
- 2
Prepare Crispy Onions
While the chicken is cooking, soak the sliced onion in buttermilk for about 30 minutes. In a separate bowl, mix flour, salt, and pepper. Dredge the soaked onions in the flour mixture. Deep fry in hot oil until golden brown and crispy. Drain on paper towels.
- 3
Shred the Chicken
Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Mix the shredded chicken with the remaining BBQ sauce.
- 4
Assemble the Sandwich
Toast the burger buns lightly. Place a generous portion of the pulled BBQ chicken on the bottom half of the bun. Top with crispy onions and pickle slices. Cover with the top half of the bun.
