    Prepare the Ribs

    Remove the membrane from the back of the ribs and trim excess fat. Pat the ribs dry with paper towels.

    Apply the Rub

    Generously apply the BBQ rub all over the ribs, ensuring to cover both sides. Let it sit for at least 30 minutes to allow the flavors to penetrate.

    Prepare the Smoker

    Soak the almond and mesquite wood chips in water for about 30 minutes, then drain. Preheat your smoker to 225°F (107°C) and add the wood chips.

    Smoke the Ribs

    Place the ribs in the smoker, bone side down. Smoke for approximately 3 hours, maintaining a steady temperature. After 2 hours, spritz the ribs with a mixture of apple cider vinegar and honey every 30 minutes.

    Add BBQ Sauce

    In the last 30 minutes of cooking, brush the ribs with BBQ sauce and continue to smoke until the ribs are tender and the meat pulls away from the bone easily.

    Rest and Serve

    Remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve with additional BBQ sauce on the side.
