Preparation
Prepare the Rub
In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Season the Brisket
Rub the spice mixture all over the beef brisket, ensuring it's well coated. Wrap the brisket in plastic wrap and refrigerate for at least 12 hours, preferably overnight.
Cook the Brisket
Preheat your smoker or oven to 225°F (107°C). Place the brisket in the smoker or a roasting pan, and add apple cider vinegar and water to the pan. Smoke or roast the brisket for approximately 18 hours, or until it reaches an internal temperature of 195°F (90°C).
Rest the Brisket
Once cooked, remove the brisket from the heat and let it rest for at least 30 minutes before slicing.
Assemble the Sandwich
Slice the brisket against the grain and serve on a bun with your favorite BBQ sauce.
