Prepare the Onions

Peel and slice the sweet onions into thick rings, about 1/2 inch in thickness. Separate the rings and set aside.

Make the Batter

In a large bowl, combine flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In another bowl, whisk together eggs and milk. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.

Coat the Onion Rings

Dip each onion ring first into the batter, allowing excess to drip off, then coat with breadcrumbs, pressing lightly to adhere.

Fry the Onion Blocks

In a deep pan or fryer, heat vegetable oil to 350°F (175°C). Carefully place the coated onion rings in the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the crispy sweet onion blocks hot with BBQ ketchup on the side for dipping.
