Marinate the beef
In a large bowl, whisk together olive oil, lime juice, minced garlic, chili powder, ground cumin, dried oregano, salt, and black pepper. Add the thinly sliced USDA Prime beef and toss to coat evenly. Cover and refrigerate for 2–4 hours (or up to 24 hours for deeper flavor).

Preheat the grill
Heat a grill or grill pan to high heat (about 450–500°F / 230–260°C) and oil the grate lightly to prevent sticking.

Prepare the bread
Split the French baguette lengthwise. Spread mayonnaise on the cut sides. Lightly toast on the grill until golden and crisp.

Grill beef and melt cheese
Remove beef from marinade, letting excess drip off. Grill the beef quickly until browned and just cooked through, about 2–4 minutes per side depending on thickness. During the last minute of cooking, place Monterey Jack cheese slices on top of the beef to melt.

Assemble and serve
Open the toasted baguette, spread mayonnaise on the interior if desired, add the beef with melted cheese, top with grilled onions and jalapeños. Close the sandwich, slice, and serve immediately.
