Whisk together olive oil, fresh lime juice, minced garlic, ground cumin, chili powder, paprika, salt, and black pepper to form a bright, spicy marinade.

Prepare marinade

Pat chicken dry and place in a resealable bag or shallow dish. Pour marinade over the chicken, seal, and refrigerate for 60 minutes.

Preheat grill or grill pan to medium-high heat.

Remove chicken from marinade and grill 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice into thick fillets.

Slice onion and jalapeño; grill until onions are tender and lightly caramelized, jalapeños blister. Split baguette and lightly toast on the grill.

Grill vegetables and toast bread

Spread mayonnaise on the inside of the toasted baguette. Layer grilled chicken, jack cheese to melt over the chicken, grilled onions, jalapeño slices, lettuce, and tomato. Close sandwich, press gently, and cut.
