    Prepare tuna salad

    In a small bowl, combine drained albacore tuna, mayonnaise, and Dijon mustard. Mix until creamy and evenly incorporated. Set aside.

    Prep vegetables and bread

    Slice avocado and tomato. Rinse and pat dry lettuce; separate into leaves. Finely chop red onion. Lightly brush olive oil on the outer faces of the bread slices.

    Toast bread

    In a skillet over medium heat, toast the oiled bread slices 1–2 minutes per side until lightly golden.

    Assemble the sandwich

    On the bottom bread slice, place one slice of jack cheese. Spread the tuna salad over the cheese. Layer avocado slices, tomato, red onion, and lettuce. Top with the second slice of jack cheese. Place the second bread slice on top, oil side facing out if you brushed with oil.

    Melt and finish

    Return the sandwich to the skillet over medium heat. Cook 3–4 minutes per side, pressing gently, until the cheese melts and the bread is crisp. Alternatively, melt cheese in a toaster oven.

    Serve

    Remove from heat, slice in half, and serve immediately.
